I'm not sure if anyone has brought this up. In the ingredients section, it says Whole wheat flour (624g); AP flour (240g) for a total of 864g. then water 737g - 794g. My understanding of the baker's ratio is flour to water. This will put this recipe at well over 100% Am I wrong?
