Hi Ron, you have a point! I think if you plan to bake this bread in a Dutch oven you might want to bake a larger boule (about half the dough). This will likely fit your pot better and will allow for a slightly longer baking time. I would remove the lid after 20 minutes, and continue baking until done. Overall baking time will likely be more like 35 minutes, or a bit longer.
