I followed the recipe almost exactly, and it turned out great. My only change was using K.A. bread flour instead of all purpose flour, because I didn't have it -- I don't use white flour much. Needless to say, it rose well. For transferring the dough once it's on parchment paper, try a thin cookie sheet. It works just as well as a peel.
