We're happy to help explain. Try to separate in your mind fluid ounces and the weight of each ounce. 1 cup of flour weighs much less than 1 cup of water (think about the weight of 1 cup of rocks vs. 1 cup of feathers). Ingredients have varying weights based on their density. So when making sourdough starter, either use measuring cups or weigh your ingredients using a scale. 1 cup of all-purpose flour = 4 1/4 ounces and 1 cup of water = 8 ounces.
