My favorite combination of apples (of the ones commonly available here) consists of Rome Beauty, Macon and Granny Smith. The Romes are not very juicy, so I add 2 tbs of frozen apple juice concentrate. With 2 tbs of Clear Gel this bakes up to wonderful filling, not too soft, not too crunchy and with lots of apple flavor. I also use an all butter crust for all of my pies.
