I’ve made several pies in the last few months and have used different ones for each. I’m in North Texas so we don’t get some of the varieties
you mentioned. My favorite one to use is a Cosmic Crisp. Very sweet and crisp, even after baking. Honey Crisp work well also, but not as sweet as Cosmic Crisp.
I just made one with Envy apples (because they were on sale -$.87/lb.) and used the same recipe as before and the juices never thickened at all. It was like a swamp with apples. (Yuck!) I’m not sure exactly why. Any thoughts on that?
