I have always used a combination of McIntosh and Granny Smith for my pies. The Granny Smith hold their shape while the Macs don't. My Mother was diabetic so for my pies and to keep the added sugar to a minimum, the only sugar I added was 1/8 to 1/4 cup of brown sugar. I like Macs so I use one more McIntosh apple than Granny Smith.
