I loved the pies I made with northern spy - so did everyone else. I make Granny Smith pies for those who like them tart, for myself I like a mix of apples. A ripened on the tree golden delicious is totally different than the pathetic, picked too soon types. Adds great flavor to the mix. But it should be hard. Golden with little dots scattered her or there. Like a good cider also and will add a bit of it to a pie if the apples are a bit “dry”. A bit of lemon perks up dull apples - even a bit of zest. Always cinnamon, a bit of nutmeg and cloves - gently with the last two! Not easy to buy a good pie - often not seasoned, filled with goo more than apples, the crust gone crumbly vs flaky - even when you buy from a store that fills them with apples they are frequently long on half cooked Granny Smiths or some such and leave you with indigestion! Which no good pie should do. And even then they fill like they have goo for their thickener. So yeah I make them from scratch - thicken with a little flour or cornstarch and they are very good!
