Yes! We have Winesaps in Virginia & they are always included in apple pies, apple crisps.
Typically I make a few trips to the local orchard & get a variety to eat fresh, make sauce, and pie & cake. Just after thanksgiving I take what’s left & cook them into “Anything Goes” applesauce & freeze.
