I like to use a mix of 2-3 apples for pie, crisps, cobblers. Cortland because I love its taste eating out of hand & it doesn't get brown after slicing. Granny Smiths for tartness & texture. Jonathans or Macintosh for their classic appley taste & because they're easy to come by. Cinnamon and a very small amount of ground clove goes in. Lemon juice. We like tart-sweet in a good balance.
