I use my mother's recipe which calls for either Rome Beauty apples (often just labeled Rome) or Macintosh. I used Macintosh once and ended up with applesauce pie, so I've always used Rome Beauty apples, but they are terribly hard to find. I've been known to drive 3 hours from PA to VA for Rome apples, then turn around and drive home. The past couple of years, one of our local farm markets has had them but so far this year, we've not found them. If I can't find them, I'm thinking of using Honeycrisp.
