I am a pie baker. In Ohio we have Melrose apples which are an October apple. I like them so much, that when living in Florida, my sister sent me Melrose apples for my thanksgiving pies. They are very tasty and do not require much sugar. They also keep their shape and don't turn to mush.
PS: Only use King Arthur flour for all my baking.
