When I see Honeycrisp apples on sale -- I've seen them here in Las Vegas grocery stores for $0.99 to $1.27 per pound -- I'll pick up 10-15 pounds of them. I canned 7 quarts of apple pie filling last year and used a homemade apple pie spice mix containing cardamom. I'm ready to do it again this year, it was so delicious. Home canned filling is so much better than store bought; the apples keep their shape and have a firm texture. Refrigerated dough means I can turn out an apple pie fast, with no peeling and zero mess.
