Jonathan apples are my standard for apple pie, as they were for my mother. We've been baking with them since the late 1940s. You get a good apple taste, and they aren't too firm, nor too mushy. I love their sweet/tart balance for a pie. If I can't get them, I'll use Cripps Pink, which bake up firmer.
