I have baked my favorite recipe Pink Adobe Apple Pie for years with nearly every apple that comes down the pike! All of them are good and I can always be counted upon to try the latest new variety! I love Cosmic Crisp but Opals are my all time favorites. Sometimes I mix one Granny Smith with an Opal for the crispiest, tangiest, yet sweet as honey taste. I am making one again this Thanksgiving.
