Staymans are my very favorite for everything! I used to get them in Virginia, but have not found them at all in Washington state, sadly. I miss them! Even stands that have lots of old varieties don't have stayman. I live north of Seattle and have not found much variety, unfortunately. If anyone knows of a place to get stayman apples out here, I would love to know! We tried the Wenatchee area-apple country-with no luck. Most folks here have never heard of them, either.
