Mary-Katherine: You are one of the few people I know that mention Winesap apples! Stayman and Winesap are my go-to apples for everything from applesauce, coffee cake, and pies here in SE Pennsylvania. They are an old-fashioned apple that are hard to find these days due to the fact that they don't have a long shelf life. They don't ripen until October so are also one of the later varieties to come to market. I can usually only find them at orchards but it is worth the extra stop to get that crisp, juicy, sweet/tart taste.
