When Julia Child was baking pies, maybe she didn't have the selection of varieties we have today. Don't think less of Julia Child if she used what she had or what was available.
She lived in a different time than we do now. It all depends on where you live as to what is available. Honeycrisp is readily available in the south as is JonaGold and Granny Smith. I prefer a mix of all three, however, if I only have one of the tree, I will use what I have.
