For years I used a combo of Granny Smith and Jono Golds because my mother did. Then I read an article in the NYT about a famous pie-maker in New York who used nothing but Honey Crisp and always pre-bakes her bottom crust for any fruit pie. People have been singing her praises since. I tried the Honey Crisp pie and my brother-in-law said it was THE best apple pie he has ever eaten. It was out of this world delish!
