Hi Debbie, Growing up in Virginia we used to go to the apple orchards and get Winesap, Stayman, Rome and McIntosh apples. Mom made pies and applesauce from the apples and stored the rest for us to eat on throughout the winter. I also go to the apple orchards to get Winesap and Stayman apples. I have mixed a sweet apple, like Fuji, with the apples that is a little sweeter and I do not have to add any sugar to the applesauce when it is served. I haven't tried this with the pies, though.
