The women in my family always made apple pies from Transparent Apples. Back then, they were easy to find, but today, with all the other apples available, it seems the Transparent has fallen out of favor, probably because they don’t store well. But the great apple flavor, tartness, and firmness of the cooked apple can’t be beat by any apples today. My faves now would be Braeburn and Jonagold.
