Unfortunately, none of the apples you mentioned are in our markets except Granny Smith. All too often the cooking recommendations from East Coast sources don't apply here in the West. I'm sure I can substitute locally available produce, but it's more guess-work and I would so like to be able to follow your recipes I do enjoy reading them at least.
