I have two favorite apple pies. One made with Ida Reds when I can find them (not Paula Reds!!!) They have a short window of perfect ripeness and don't keep well, so they are an opportunity only kind of pie. The second is a combination of Northern Spy ad McCoun. The spy for structure and bite, and the McCoun for amazing flavor. The McCoun is also hit and miss, with a short season and short shelf life, but worth snooping around to find!
