A very close friend, whom my husband and I once stayed with during a visit to her Vermont home, made us two absolutely scrumptious apple pies while we were there. They were very different from any apple pie I or anyone else in my family had ever eaten, and here’s the reason why. She doesn’t even bother to peel her apples! I was flabbergasted. Her reasoning? The peel is so nutritious, why would you want to throw it away?! And I have to admit that her question made sense because the fact that the apple slices still had their peels didn’t change my enjoyment of her pie one iota. So, give yourself a break from that unwritten (anywhere) “apples just gotta be peeled” rule and give it a try.
