I use Cortlands for my annual ”Applesauce Factory Day”. They are best the very first time they show up at the farmers market, as both flavor snd texture seem to decline with more time in or off the tree. By the way, I don’t use sugar in the sauce, but do add some very good apple cider from the farm I buy from.
