My mom used Duchess apples from a tree on my grandfather’s farm, and for the past ten years (in Oregon), I’ve used a mixture of Granny Smith and Gravensteins. Now that I’m back in the Midwest, I’ll have to do a bit of playing around to duplicate that combination of texture and flavor.
