The Red Delicious Apple is one of the most overbred, poorest quality Apples on the market. Now as for Pie's, the first test is the age and quality of the apple. A first rate pie apple that it is not fresh will not be as good as a utility apple that is fresh. Trust your supplier and get good apples. Secondly, make sure that the apple isn't so big as to lose flavor. Peel a few more and get the more concentrated flavors. Finally, a good apple pie must have a variety of apples, and frankly, the crust is nearly as important. Focus on taste in the crust not a "pretty" Apple Pie. And be sure to get the right seasoning. Personally, I like Northern Spy as the primary apple for my pies.
