I’m a Granny Smith fan from way back. I love the tartness they bring and the texture is perfect. I sugar and spice them in a bowl and let them sit until they juice releases, then pile them as high as I can. I then add just a tiny amount of fruit gel to the liquid and pour some over the top. Dot with butter and bake!
