If you are in New England, Rhode Island Greenings are a good keeping apple that is slightly tart and keeps its shape during baking. They are a late season apple, so start calling in early October if you want to find them (a lot of the larger orchards do have them). We prefer a slightly less sweet pie and have even been known to toss in a cup of whole uncooked cranberries with the apples (it makes a pretty pink pie). I've also tried Ida Reds, but still return to the Greenings. I'll have to try the Gravensteins next.
