My grandmother and mother were top notch cooks and always used Grimes Golden apples for pies and dumplings. They are a legacy apple but you can still find them at older orchards. There is no better apple baking as it is sweet and semi-firm. I bake a lot of pies and this is by far the best. It's a later season apple.
