I concur, this is such a delicious apple. I haven’t baked with it yet, but I buy them as special treats for myself because of the cost. I think next time I can locate some I’m going to try some baking. Also down in Oregon, there’s a cider maker (2 Towns) that uses Cosmic Crisp for a couple types of their brew. It’s wonderful.
