I use McIntosh, my favorite and Granny Smith, my husbands favorite. I have never mixed the two together in the same pie. I made applesauce by mixing three different combination of apples and really did not the like the flavor. I might try Gala and Granny Smith sometime. Gala will help offset the bitter taste of the Granny Smith.
