Grew up in Illinois but have lived in Georgia for over 30 years. I loved Northern Spy but no one grows them here even tho there are many apple farms in North Georgia where we live.
I am fascinated by the rose design pie, and now am thinking of what apples I might use. Macintosh is too mushy, Granny Smith a little short on flavor...Pink Lady is available, and several others. We get apples from New York State and North Carolina as well as Georgia. If I am going through the work of making that pie, i want to make it with the most flavorful apples. Currently thinking, a mix of Granny Smith, Pink Lady, and maybe one or two others.
I have tried Honey Crisp and while it is tasty to eat, I didn't care for it in a pie, while Gala is too wet. Would appreciate any suggestions.
