Northern Spy was my grandmother's choice for apple pie and so, when available, that was also my first choice. When I couldn't find those I used a mixture of Golden Delicious and Cortland. Years ago, while living in central New York state I found an orchard selling Northern Spy - Golden Delicious cross apples. They made the best tasting pies I ever made. I no longer live in New York and have not found that perfect apple any place else.
