There are so many varieties across the country (about 100 grown commercially, but over 2,000 privately according to one site) that aren't available many places, no one is likely to try close to all of them. In the "Apple Hill" area near Placerville, CA, Golden Delicious is commonly used in bake shops because they require little or no sugar to be added, but they're too soft for me. I like some tartness and firmness, so my favorite is Newtown Pippin. I also like Stayman Winesap when I can get them, Pink Lady, and Fuji from my own tree works pretty well when it produces enough (some years it doesn't). York, Empire, and others are occasionally available, and good.
