Judith: Interesting career...where can I easily find the aroma profiles of the various apple varieties? I love apple pie, but seldom bake pies. But you have tweaked my imagination to mix apples when using them cooked.....cobblers or applesauce. Living in a cabin without a full stove (thus sans oven except for a very large, convection-toaster oven), the cobblers are more reliable, and my pressure cooker/rice cooker does really well for apple sauce. But trying a mix of apples would be fun.
