Absolutely agree with using at least 3 apple varieties , however one MUST be the wonderful, old time, "Ida Red"! They hold their shape, nice large size, freely offer up an explosion of juice for syrup. They're a late season apple and becoming hard to locate. Every autumn I hunt them out and buy as many as I can fit into the spare fridge. Try them, you'll love them too!
