My favorite pie apple is Baldwin and I mix with on other 1 or 2 kinds—like cortland, mac, macoun. I always use at least 2 kinds. One firm one mushy. Any firm with mushier apple. For flavoring I use 1 part brown sugar 2 parts white sugar for seasoning 1/8 t nutmeg and 1/4 t cinnnamon so as to not overpower apples
