My mother's apple pie recipe calls for Rome apples, sometimes called Roman Beauty. They have become very hard to find in the grocery stores here in my part of PA but I've recently discovered them in a local farm market. I have, however, driven 3 hours to the Virginia Farm Market to buy apples and 3 hours back home--I have friends who live in that area and they told me that the apples were available there. I tried Macintosh once and ended up with applesauce pie. I've had pie made with Granny Smith apples and I thought it was very dry--not sure if it was the apples or not enough sugar to make juice while baking.
