I live in Maine and confess a long-term preference for the tart flavor of Macintosh. But a friend recently shared some of his State Fair apples with me. These are an early hybrid variety that have a mildly sweet taste and a crisp texture. I have made a few pies with these so far and they don't turn mushy and are really yummy. Or as we say here in Maine, they are "wicked good". They also make lovely applesauce.
