Traditionally, my mother and I have always made our apple pies with Jonathan apples, but they are harder to find each year, and the growing season seems to be a bit short. So I tend to use Cripps Pink (Pink Lady) apples these days. Similar sweet/tart balance, and firmer than Jonathans.
