Generally my favorite apples for pie making are Jonnagolds. I like my apples to be soft, but stay in distinct slices. Living inTexas it’s not usually possible to get Macintosh or Empire in any state worth having; they are far too mushy. Golden Delicious are available year round and have a good texture, but they don’t have as much flavor. Pink Lady and Jazz are decent choices when they are available too. Your article has inspired me to try a few others. I’ll have to see what’s available next time I go shopping.
