Gosh PJ, your apple mix is just fine. My apple pies are 5-inch, with no added suger. I tend to mix several from tart to sweet to crisp to just firm. Takes at least 5! Yellow Transparent, Cox Orange Pippin, Gravenstein, Chestnut Crab, White Winter Pearmain, don't forget Priscilla, Spitzenberg, Noble Golden, Haralson, Black Oxford, Sops of Wine. Early season, mid and late. Its nice to be in the orchard this time of year. But now it's pie time! Thanks for the inspiration!
