Thanks for suggestions for new Apple varieties to look for I guess I'm a little weird I've always done a mix of apples Granny Smith for the firmer nite and tartness and some softer sweeter apples for the mush as you call it I like the combo I firm bite in a sauce. Kind of like my favorite cookies crisp on the edges with chewy center guess it about texture lol
