When I was young all the women would gather at different harvest times to prep and can whatever was harvested. During apple season they peeled apples and baked pies. The apple of choice was Winesap. As an adult, I have only found them once. It's sad to lose such a perfect pie apple. They hold shape and have a potent apple flavor with just enough tartness.
