I, too, am from Ohio, and my mom made fabulous apple pies. I remember Northern Spy and Pippin as favorites. My money is on the 'new' apples being Pippin - green and very good even before storage. Just a piece of trivia: Mom used to also talk about 'storage' apples, meaning those which stored well and consequently got into the groceries in summer and late summer. Never best quality back then, as they had been sitting in storage. Way back then. Not like now! So any 'new' apple in the fall was welcomed! Look around your area to see if there are apple orchards where you can get old varieties. I'm in southern California, we even we have them, 'uphill' - in the local mountains.
