I'm with you Larry. I think apple pies are almost as "individual" as pizza in our country. My Mom's "go-to" apple was a McIntosh, or a McIntosh/Northern Spy blend in pies for which she was practically a legend. Though the Macs didn't show the definitive slices of apple, with a bit of cornstarch mixed with the sugar the slices came out well formed and didn't run with syrup or juice in the bottom of the pie dish. The FLAVOR was to die for!
