I tried the experiment with apple varieties in NC and noticed a pattern similar to the blog results. The apples that had what I thought had the best apple flavor lost their shape the most (Cortland, McIntosh, Stayman). Rome held its shape but tasted bland to me. A couple of varieties I hadn't tried before fell somewhere in the middle (Arkansas Black, Sweetie, York).
