Hi, Ann! Since we're not sure what region you're in, it's tough to say exactly what suitable varieties are available near you, but we do know where you can find experts on the matter! If you call your state's Agricultural Extension Office, they'll know all about your region's apples, including which ones will bake up nice and soft without getting mushy. They're an amazing resource, and we can't say enough things about their expertise when it comes to locally grown foods. Happy baking!
