I've always used either Honey Crisp or Ginger Gold and have been hesitant to break out of the mold! Now I'm anxious to try your recommendations - especially since I have a new range with true European convection and will need to figure out the adjustments from cooking with a plain old electric oven. What better way to figure it all out than with apple pie!
